The tradition of baking potato cakes ("bandos") on cabbage leaves in the Lazdijai region

The banda is a traditional potato cake from Dzūkija (a cultural region in southern Lithuania), baked in a wood-fired oven on dried cabbage leaves. When the hostess removes the fragrant banda from the oven and places it on the table, family members tear off pieces by hand and enjoy them with darycinis—a sauce made of curd cheese and cream—crispy pork cracklings, sour cream mixed with butter, or a glass of fresh milk. In some places, the banda is served differently: once removed from the oven, it is torn into pieces, placed in a clay pot, covered with crackling sauce and sour cream, and returned to the oven for another half‑hour before serving.

These potato cakes are baked on festive occasions, especially on Sundays, when the whole family gathers early in the morning to prepare a shared meal. It is a festive ritual, one in which every family member can take part, and relatives living nearby or visiting from afar are invited to the table. Today, the potato‑cake tradition in the Lazdijai region is maintained by at least thirteen families in Kapčiamiestis, Šeštokai, Šventežeris, Žagariai, Avižieniai, Varnėnai, Verstaminai, Teizai, Krikštonys, Šadžiūnai, and Lopiškės. Sharing the banda strengthens social bonds, expresses respect for tradition, care for loved ones, and the value of generosity.

Potato bandos are an important part of the culinary heritage of Dzūkija and the Lazdijai region—a symbol of local cultural identity. Preparing the dish according to a distinctive local recipe, using home-grown ingredients, reflects everyday rural lifestyle in Dzūkija. Because of variations in recipes, baking methods, and each family’s taste preferences, homemade bandos have distinctive flavors, aromas, and textures.

Educational workshops and tastings dedicated to banda‑baking are especially popular among culinary heritage enthusiasts, schoolchildren, and visitors. The dish also reflects the hospitality of the inhabitants of the Dzūkija region: experienced hostesses prepare these delicious bandos for special occasions and official receptions.
